Why go with a hardware wallet over just having a encrypted USB drive?

I don’t see why it would be better because they would have my encrypted keys in the cloud you have the seed phrase to restore. I could just have a USB drive with a seed phrase to get access to my keys and if I need a backup I make another and bury it.

Bonus is I could just use a live OS as the drive with the partition itself encrypted and have the scripts needed to move coin from the keys just saved in the encrypted partition.

I don’t think crypto should be a ease of use technology but rather one on security and self reliance.
