Wrapped Ether was taken from my Metamask Wallet VIA private transaction

Can anyone explain how someone might be able to take crypto from your wallet without having the transaction appear within the ethereum mempool?

There's not record of the funds being taken except for when I go to ERC20 Token Transactions on etherscan.

Not sure how this is possible, so anyone additional insight would be greatly appreciated
