What does zk technology have to do with Enterprise Ethereum (e.g., Provide and Unibright)?

I've heard people saying Polygon and zk-rollups are an integral part of enterprise fully embracing public ethereum, possibly starting this year, but I don't really understand why it is important. Can't you just use something like Baseledger to submit cheap anonymous hashes for proofs?
