Why are gas fees different depending on the ERC20 token you wish to transfer?

Hi! It looks to me like low liquidity tokens cost more gas to transfer than higher liquidity ones. Also gas fee is obviously less expensive when transferring ETH but I understand this is because you don't interact with a contract. However, I don't get why the fees can be so different from one ERC20 token to another. Any explanation? Thanks!
