Etherscan Gas Tracker Question

Hey all.

I understand the basics behind gas fees. I'm trying to better understand them so I can be a little more efficient in how I transact.

I've been following on Etherscan: https://etherscan.io/gastracker

Can someone help me understand the difference between the three high/medium/low gas prices in the squares near the top and then the Transfer and Uniswap numbers below it?
