What exactly will happen to Etherium and Defi if inufra network is shut down indefinitely?

What will happen to Etherium and may be Defi if the people at ConsenSys, who own and are directly responsible for the infura, decide to shut down the entire infrastructure? Or from the government, just make them stop everything, just because they can?

Infura hosts a huge percentage of the etheric network of amazon cloud servers (amazon web services), so they also depend on amazon and Jeff Bezos.

Defi is entirely based on the ethereum network and depends directly on it.

The etherium network is not untouchable and it turns out that its existence depends on a group of people who can decide everything or be put under pressure.

What does this say about defi? How can the future of decentralized finance depend directly on ConsenSys CEO, Jeff Bezos and the US government?
