Can I mine my own transaction?

I have a really expensive contract interaction I need to do. It's gonna cost like $1200 at 160 gwei. It isn't time sensitive by the hour, but it should be mined within 24 hrs or a week at the latest. I'm wondering if I can set up a mining rig with gpu and mine my own transaction? Or if there's a way to figure out if I can stink bid at like 30gwei and maybe get it mined within a week by someone else.
