MetaMask wallet (MMW) matches Ledger wallet (LW). Can I change my address/seed phrase on the LW then transfer ETH from my MMW to the new LW address?

Is this possible? Any risks or issues? I have tokenized ETH, rETH and sETH, via Stakewise. Can I send these to ledger wallet as well? I want to protect my assets by removing from the internet entirely and onto the ledger wallet.
