Looking for guidance dear friends

I have a question for you. I need some guidance. My house has recently been fitted with solar panels and I get about 7-8KW per day excess which is going unused. I also am looking to buy a proper gaming pc, with possibly 2 gpu's, also to mine some ravencoin. I only want to mine to HODL for the long run. Not looking to chase immediate profits. Do you have any recommendations what gpu's, motherboard to buy? I have about $2500 to spend on the pc. Any help hugely appreciated. P.S I can use more than 8KW per day on mining if needed. I would also be happy to be directed on good quality reading material on the matter if you have anything to suggest. Thanks frens
