How to cover Ethereum and USDT Transaction tracks?

I am a crypto noob and I have some USDT and ETH in my wallets on my country's exchange, but due to high transaction rates and Tax of about 56% on any Profits I want to transfer them to a different wallet (to denote that I gave them to someone else in exchange of service).

While I transfer them to a other wallet hardware or on a website, I want to cover my tracks so that the crypto can't be traced back to me. I have thought about permanently using an VPN while using that wallet and for doing any future conversions etc.

I don't know if my plan is even 1% solid, that's why I need your help regarding this. Please point out the problems I can face and what other alternatives I can look into. Also, please suggest a good wallet for this purpose.
