Looking for advice from experienced miners – PSU question

Hey guys! I'm currently using a PSU solution with some ATX power supples combines with Server power supplies for my rig. I know that as a rule of thumb, I should never use more than 80% of the capacity for my PSU, given that they are only rated 80% (potentially they could do a bit more, but 80%+ is considered the safe rating.

So I've got my rig power up and running and happy. As for the wiring, I always follow the recommended wiring as if my cards were running at max capacity (~220W for 3070's) so that in case the overclock settings crash, the wires won't melt due to being overloaded with too my wattage running through them. So the wiring is no problem, but here comes the question: Given that I set the power settings to 125W per card, does this let me fit more cards onto my PSU's without any worries in case of the overclocks crashing? Say for a 1200W PSU, I've got 960W to work with. Say I then smack 7 cards at 875W (7*125W) into the PSU. What will then happen if the overclocks crash, and the rig "tries" to pull 7*220= 1540W? Will the PSU just turn off or crash? Will the rig just lie dormant, not powering on? Or will the worst option happen, the PSU goes haywire, get smoked and start burning up my rig? I naturally want to fit as many cards as possible onto my PSU, but not at the cost of safety.
