Isn’t Ethereum just a democracy?

I thought the point of blockchain was to eliminate the "human" part of money and make everything trustless, but looking at Ethereum and other projects in the crypto space it seems that there are decisions made by humans in a democratic manner that influence the project and even the chain, i.e. the hard forks. While my Ether technically are held and transacted in a proper decentralized and trustless manner, the network they are in is subject to changes by humans. Isn't this a major flaw that defeats the whole point of all crypto? Will Ethereum ever be totally immutable?
